Nicoletta cheeses is a dairy active in Donnas, in Valle d'Aosta, since 1988. It is a family-run company: Nicoletta Coda Zabetta and Paolo Peraldo, the owners, are supported in the management by their son Giacomo. Having moved to Valle d'Aosta from Biella, Nicoletta and Paolo are known throughout the territory for the vast range of quality dairy products and for the different ages to which they subject their cheeses (washed rind, with mites, flowery rind, with a moldy crust…).

In addition to Donnas, Nicoletta Formaggi is also present with her taste boutiques in Aosta, Courmayeur, Milan and London.
Among the shelves of Nicoletta Formaggi there are all the main excellent cheeses of the Aosta Valley, including Fontina DOP, Toma della Valle di Gressoney, Bleu d'Aoste and Montagnard cheese.
There are also cheese boxes, special recipes and baskets for various occasions.
Not only cheeses: at the company there are also other typical products of the Aosta Valley: from boudin to tiles, passing through local beers and wines, you can find all the main foods and drinks that distinguish the Aosta Valley food and wine tradition.
Nicoletta Formaggi's cheeses are produced from the milk of mountain cows, fed with fresh herbs. They maintain the unmistakable aroma of freshly milked milk.
In the production of cheeses Nicoletta and her husband Paolo work putting care and passion first. This translates into a scrupulous selection of cheeses and meticulous maturing, operations that guarantee products characterized by natural and genuine flavors and aromas.
Nicoletta and her family boast extensive experience in cheese refinement, an art they have learned to master and perfect in over thirty years of field work. Each product requires different attention and times, in a process that involves delicate operations such as salting, washing and turning.
